Ingredients
  

  • ½ cup unsalted butter
  • ½ cup whole milk
  • cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 3 cups quick oats
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 6 –8 Peeps marshmallow chicks or bunnies cut into small pieces

Instructions
 

  • In a medium saucepan over medium heat, melt butter with milk and sugar, stirring constantly.
  • Bring to a full rolling boil and boil for 60 seconds exactly.
  • Remove from heat immediately.
  • Stir in cocoa powder, vanilla, and salt until smooth and glossy.
  • Fold in oats until fully coated. Let mixture cool 1–2 minutes (important so Peeps don’t fully melt).
  • Gently fold in half of the chopped Peeps pieces.
  • Drop 1½ tablespoon portions onto parchment-lined baking sheet.
  • Press remaining Peeps pieces onto tops for decoration.
  • Let set at room temperature for 20 minutes until firm.
  • Texture cue: Cookies should firm on the outside but stay soft and slightly gooey where the Peeps are mixed in.

Peeps Tip:
Add Peeps after removing from heat and cooling slightly to keep their fluffy texture and bright colors.
Storage:
Store in airtight container at room temperature up to 3 days.
Freezing:
Freeze up to 1 month (texture of Peeps may become slightly chewy after thawing).
Humidity Tip:
Chill 25–30 minutes in humid climates to prevent stickiness.

  • Peeps fully melted? Mixture was too hot—cool slightly next batch.
  • Too soft? Boil 5 seconds longer next time.
